Matt Moran and Peter Sullivan met in 1988 whilst they were both working at La Belle Helene on Sydney's North Shore .
A mutual respect for each other and a growing friendship saw Matt and Peter form a partnership that has seen them work together to create successful dining establishments including the Paddington Inn Bistro and Moran's Restaurant.
After much planning, Matt and Peter launched their spectacular fine dining venue. In December 1999 they opened the doors to ARIA Restaurant at No. 1 Macquarie Street Sydney - with Matt managing the kitchen and Peter front of house, ARIA operates like a well-oiled machine. 10 years later they are set to open the doors to a new ARIA Restaurant in Brisbane.
Matt's contagious passion for food and Peter's desire for service excellence has made their restaurateur partnership one of the most successful in the business.
In its first year, ARIA received Two Chef's Hats in the 2000 SMH Good Food Guide and has maintained its two hat status in the current 2009 Good Food Guide. ARIA was also awarded Sydney Morning Herald's Good Food Guide 2009 Wine List of the Year Award and was inducted into the Hall of Fame as part of the Australian Wine List of the Year Awards 2008.
Matt and Peter continue to add new and exciting events to the ARIA calendar, such as the Wine Dinner Series, intimate gourmet chef tours and arias at ARIA , a series of operatic dinners in collaboration with Opera Australia.
Matt maintains many hours of work in the kitchen at ARIA as well as donating much of his time and expertise to Australia 's charity and arts dinners. He has still found time to pave a successful career on the international and local culinary circuit. He cooked at the prestigious gourmet house, James Beard, in New York , and is currently a chef on the International Culinary Panel for Singapore Airlines accompanying chefs such as Gordon Ramsay, George Blanc and Alfred Portale. Closer to home, Matt has appeared as a judge on two series of Channel Seven's, "My Restaurant Rules" and has starred as the consulting chef on two series of Channel Nine's, "The Chopping Block" and more recently has appeared as guest chef on several episodes of Channel Ten's, 'MasterChef'.
